In Season: Lettuce

By Copper Williams

Rejoice, my foodie friends! Fresh lettuce is prepping for harvest, which means we’re in for a nutritious treat in salads, wraps, and even soups! Lettuce has a long legacy of being served at the dinner table, older than most vegetables we have the luxury of dining on today. Tracing its presence as far back as ancient Egypt and Greece, it was served up as a sleep-inducing dish, when the Greeks believed it was perfect for settling down guests after a hearty evening of hosting.

As our staple vegetable made its way to America, our colonial ancestors continued growing it in their own gardens whenever the season allowed. But as time passed and lettuce grew in popularity, it was cultivated on a commercial level in the twentieth century. These days, over ninety percent of our nation’s lettuce production occurs in California and Arizona, with California leading.

Because of its high nutritional value and low calorie count, lettuce has made its way into almost every restaurant, café, and deli menu across San Joaquin. Taking a bite out of this leafy green adds calcium, riboflavin, and vitamin A to your diet. You’ll get a healthy boost of fiber, potassium, and manganese, too! The darker the leaves, the more nutritious the lettuce! So prep your fork and bite into a bundle of butterhead, loose-leaf, iceburg, or romaine. Your body, and taste buds, will thank you!
